Moroccan sardine: what you need to know

Morocco, the world's leading sardine producer

The sardine (Sardina pilchardus) is Morocco's signature fish. The country is the world's leading sardine producer, and small pelagic species account for most of the landings of Morocco's coastal fisheries. Sardines are caught by purse seiners along the Atlantic coast, from Safi and Agadir down to Laayoune and Dakhla.

Seasons and availability

Sardines are caught for much of the year, with volumes and fat content varying with the seasons and fishing areas. Biological rest periods may be decided to protect the stock. Fast freezing right after landing makes it possible to offer sardines of consistent quality all year round.

Quality and uses

Rich in omega-3 and protein, Moroccan sardine is a tasty and affordable oily fish. Frozen whole, IQF or in blocks, it is used by canneries, processors, food service (grilled or fried) and retailers, as well as for fishing bait.

Frequently asked questions

How are sardines graded?

Sardines are usually graded by number of pieces per kilo: the lower the number, the bigger the fish. Available sizes depend on landings.

Does frozen sardine keep its quality?

Yes, provided it is frozen very quickly after catch and stored at –18 °C or below without breaking the cold chain, which we monitor from reception to shipment.
