Moroccan cuttlefish: what you need to know
Species and fishing grounds
The common cuttlefish (Sepia officinalis) lives on the sandy and muddy bottoms of the Atlantic continental shelf. In Morocco it is caught by coastal and offshore trawlers as well as artisanal fishers, especially south of Agadir. Together with octopus and squid, it is one of the cephalopods that make Morocco a major seafood exporter.
Seasons and availability
Cuttlefish landings vary with the seasons and with the cephalopod management plans, which include biological rest periods set every year. Freezing smooths out these variations so that cuttlefish can be offered all year round, with consistent quality.
Quality and uses
Cuttlefish stands out for its thick, tender white flesh. It can be supplied whole or cleaned, IQF or in blocks. It is widely used in food service (grilled, fried, black rice, stuffed), by processors and by retailers.
Frequently asked questions
What is the difference between cuttlefish and squid?
Cuttlefish has a broader body and thicker flesh, with an internal shell (the cuttlebone). Squid is more elongated, with thinner flesh, ideal for rings and frying.
How is cuttlefish graded?
Cuttlefish is graded by weight or by number of pieces per kilo. Available sizes depend on landings: specify your needs in your price request.
